Mixed Mushrooms with Fish Sauce

Combine soy sauce, fish sauce and garlic to Portobello mushroom and left for an hour. On the other side, cook the button mushroom in olive oil until it gets tender. Grill Portobello mushroom over grill pan. Cook for 3 minutes and chop it. Add Portobello mushrooms to button mushroom mixture. Mix well and serve.

Spaghetti Squash and Avocado Chicken Salad

It will look more like rice noodles. Roast the pierce squash until gets tender. Cool it and discard seeds. Add lime juice, oil, fish sauce, Sriracha, and sugar in a large bowl; season with salt. You will enjoy and also, this would be great with leftover sliced steak or pork, too.

Braised Lamb Shanks with Fish Sauce

Most of the chefs are using fish sauce to enhance savory flavor during the preparation of lamb shanks.

Lamb shanks are put in a plastic bag along with garlic for more than 4 hours. Cook the shanks until get brown. Cook shallots, cilantro stems, and finely chopped garlic separately. Also add chilies, kaffir lime leaves, bay leaves, stock, fish sauce and stir. Add cooked lamb shanks and cover the pot. Left it to braise in oven until meat is pulling away from bones.

Turn shanks and add fennel and carrots to pot, submerging in liquid. Cover and left it to braise again for few minutes. Serve lamb shanks with fennel and carrots and some braising liquid, topped with celery leaves, and seasoned with a few more drops of fish sauce.

Crispy Sprouts

Fry whole Brussels sprouts and tossed in fish sauce and lemon juice for umami rich dressing Add salty Pecorino cheese, sweet-tart Granny Smith apple, nutty sesame seeds, and fresh minced chives. This would be a delicious stuff for addictive appetizer.
